Holiday Orange Bread
This recipe is from Lannie’s mom. Slightly adapted, it’s a Christmas tradition that we’re happy to share!
2 organic oranges
½ cup oil
1 ½ cups sugar
2 eggs
2 cups chopped pecans
2 cups chopped dates
3 cups flour
1 Tbsp baking powder
1 ½ tsp baking soda
1 tsp salt
Grind the oranges – you should have 2 cups of well-diced pulp, juice, and peel – and place it in a large
mixing bowl. Add oil, sugar, eggs and mix well. Stir in the chopped nuts and dates.
In a separate bowl, mix the flour, baking powder, soda, and salt.
Add dry ingredients to the bowl of wet ingredients and stir gently to mix the dough.
Put the dough into 2 buttered loaf pans, spreading it into the corners. Bake at 350 for about 50 minutes,
until nicely browned and a cake straw comes out “clean”.
Notes:
-Mom’s hand-cranked grinder chopped the orange nicely! I now use the food processor: grate the
orange coarsely and then chop with the blade. Since you will be eating the peels, be sure to use organic
oranges!
-You can substitute walnuts for the pecans and other dried fruit for the dates – but the original is our
favourite.
-I like to use a mix of mostly unbleached white flour with some WW pastry flour. You can also substitute
a gluten free flour mix.
